Cream of Shrimp Soup

 
Since I am still sick fighting this nasty chest cold,
 I'm gonna share a post that I prepared last week. 
 Cough. Cough. Cough.  Cough.
I am driving myself crazzzy.


This is an oldie but a goodie that I have shared many times before.
 
Since I recently made it for dinner,
I thought that it's worth sharing on the new blog.
 
Cream of Shrimp Soup
 

 
This is the easiest soup ever!
 
Seriously,  it's easier than easy!
 
I call it a cheater soup and I confess that the recipe probably changes every time I share it.
 

 
So,  here's what I did this time.
 
Since I had an extra teenager here for the weekend
I made a larger pot then usual.
 
For the large pot.
 
1 to 2 pounds of cooked, peeled, deveined shrimp.
1 bunch of green onions,  chopped
1 bunch of celery, chopped
 
( I think that you already know that this recipe is not on the weight watchers program..  not even close.   So don't flinch when I tell you the next part)
 
1 whole yummy delicious stick of butter.
 
In a large pot,  melt butter and sauté celery and onion until soft.
Toss in Shrimp.
 
While the celery and onions are sautéing,  open...
 
2 lg cans of cream of chicken soup
1 sm can of cream of celery
1 sm can of cream of shrimp
 
Dump all of the cream soups into the pot, 
add a cup ( sm can ) of milk
and a cup of water.
( you can add more water if you would like to make the consistency a little thinner)
 
Stir well.  
Add Old Bay or other crab seasoning
(How much really depends on how spicy you want it)
and let simmer on low for about an hour.
 
Serve with a hunk of fresh Italian bread..
Sooooo good!!!!!

Easy, right?
